A couple weeks ago a friend and fellow coach posted a recipe for a homemade rotisserie chicken and I just knew that I had to try it out! My husband is a big fan of the rotisserie chickens they sell at our local grocery store, but they're definitely not the healthiest option! Making one at home seemed like something right up our alley - and the recipe included a crock pot! (I'm a sucker for a good crock pot recipe!)
Someone might give me gruff for it being a homemade 'rotisserie' chicken recipe without a rotisserie being used, but it tastes very similar so I'm running with it :)
Please note: in the pictures you will see an extra spice - this is thyme. The recipe I used called for 1 teaspoon of thyme, but I am not a big fan of that seasoning so in the future I will omit it (as I did in the recipe below). If you're a fan, though, add a teaspoon in with your seasonings!
Prep note: You will want your chicken to be thawed for this recipe, so pull it out of the freezer the night before!
This is a perfect recipe for my family for a number of reasons - it's inexpensive, it's easy, it takes very little time to prepare and it uses a crock pot (did I mention that already!?) It also made enough for Jake and I to have leftover chicken for salads, sandwiches, etc. which is always a bonus!
Eating healthy can seem overwhelming at first. It is assumed to be expensive, difficult and confusing. It doesn't have to be those things! Finding ten to fifteen homemade meals your family likes is all it takes - and this might be one of them! This chicken cost $5 and the seasonings I had at home - that made enough for Jake, Bonnie and I to have dinner as well as leftovers. That's a pretty inexpensive healthy meal!
