The other day I shared a picture of what I made for dinner - it was a crustless quiche and it reminded me of many meals I would have with my host family when I lived in the south of France! It was tasty, easy, clean and did I mention tasty? The best part of it was that it's a perfect left-over to have for breakfast the next morning!

I believe crustless quiches are often called fritatas. My mother makes them all the time. =) Not my thing, but it sure does look pretty.
